           Veggie-Cheesy Lasagna! (No Lasagna Sheets Or Flour)!

Hi Guys! I made this recipe recently and decided to post its recipe. Why not share the joy?

Lasagna is one of my favorite dishes; but in this special Lasagna, Bread has been used instead of Laagana Sheets; a very simple change that creates curiosity and more delight! This Veggie-Cheesy Lasagna using Bread is not only delicious but is made very easily with Veggies, a Red Sauce, a White Sauce, Cheese, and Bread! Kinda healthy and great for parties, sleepovers, hangouts.. you name it! The recipe is a little long... but easy to make and delicious too! You can have this for dinner, lunch, snack... this Lasagna is filling enough for 4-10 people. Easy and quick, let's get started!!!!!   :)

Serves- 4-10 People
Preparation Time- 10 minutes
Cooking Time- 1 hour
Total Time- 1 hour 10-20 minutes (You might need more time!)

Ingredients-

For The White Sauce-

Butter                               -  2-3 Tablespoons
All-Purpose Flour/Maida -  3 Tablespoons
Milk                                 -  1 Cup
Oregano                           -  1/2 Teaspoon
Salt                                   -  To Taste

For The Red Sauce-

Water                               -  1/2 Cup
Medium Sized Tomatoes -  2-4 
(Cooking) Oil                  -  2-3 Tablespoons
Finely Chopped Garlic    -  2 Tablespoons
Finely Chopped Onion    -  1, Medium Sized
Red Chilli Powder           -  1 Teaspoon
Oregano                           -  1 Teaspoon
Chilli Flakes                    -  1/2-3/4 Teaspoon
Salt                                   -  To Taste
Water                                -  2-4 Tablespoons
Sugar                                -  1/2-3/4 Teaspoon

To Saute The Vegetables-

Oil                                -  2 Teaspoons
Finely Chopped Garlic -  2 Tablespoons
Boiled Sweetcorn         -  3/4 Cup  (I didn't add any Corn to mine)
(Small) Capsicum         -  2, Chopped
Button Mushrooms       -  1 Cup, Chopped
(Small) Tomato(es)       -  1, Chopped
Oregano                         -  3/4 Teaspoon
Salt                                -  To Taste
Chilli Flakes                  -  1 Teaspoon

Other Ingredients-

White Bread Slices -  8-10 (Take your Slices according to your baking pan)-(Edges cut off)
Processed Cheese      -  1-2 Cups (As Per Needed)

     Instructions-

     For the Red Sauce-

  1. Boil the Tomatoes for ten minutes in a pot/pan with 1/2 Cup Water.
  2. You'll notice it'll get softer, and after letting them cool down, make a puree out of them by mixing them in a blender with the Water.
  3. Heat the oil in a pan/pot. Add the Finely Chopped Garlic and saute for a few minutes. Now add the Finely Chopped Onion, and saute a little.
  4. Add the Tomato Puree, Red Chilli Powder, Oregano, and Chilli Flakes. Mix it well and the flame should be between low-medium. After 2-3 minutes, add some salt to taste.
  5. Mix and add the rest of the Water (2-3 Tablespoons). Add the sugar and cover and cook for five minutes on low flame. Your Red Sauce should be ready, and keep aside for a while to cool down. 
  6. If your Sauce isn't ready, you can let it cook and mix it for a few more minutes.
      For the White Sauce-
  1. In a pot/pan, heat the Butter and let it melt. Now add the All Purpose Flour/Maida, and keep mixing making sure they're are no lumps. (This will take 2-3 minutes on low-medium flame).
  2. Add the Milk and continuously mix.
  3. The flame should be on low, and now add the Oregano and Salt to taste. Mix it well.
  4. Your White Sauce should be ready, and keep aside to cool down. If your Sauce isn't ready, you can let it cook and mix it for a few more minutes.
     To Saute The Vegetables-
  1. In a pan/pot, heat the Oil. Add the Finely Chopped Garlic and saute it for a few minutes. 
  2. Add the Boiled Sweetcorn, Chopped Capsicum, Chopped Button Mushrooms, Chopped Tomato, Oregano, Chilli Flakes and some Salt to taste. 
  3. Saute for a few minutes on medium-high flame, and cook until the veggies are cooked and a little crunchy. Your Veggies are ready, and keep aside to cool down. If your Veggies aren't ready then you can let it cook and mix for a few minutes. For mine, I didn't use Boiled Sweetcorn.
     Making The Lasagna-
  1. Take the bread (the edges should be cut off), and with a rolling pin roll out each slice so they become thin and flat. Grate/Shred some (Processed/Mozzarella) Cheese (About 2 Cups).
  2. Take a baking dish, and now start layering. First, add a thin layer of Red Sauce. Then add some White Sauce. Mix a little.
  3. Now put in four slices of Bread. You might have to adjust yours according to your baking dish, but a little overlapping (of the Bread) is fine.
  4. Now add more Red Sauce on top, then some White Sauce, and then mix them a little. You are going to need a tall but wide baking dish. Add all the Veggies, but save a few for the end.
  5. Top the Veggies with a layer of (Processed/Mozzarella) Cheese. Add a thin layer of White Sauce on top, and then add one more layer of Bread. (This was my last layer of Bread).
  6. Add a layer of Red Sauce again, and then some White Sauce. Mix a little. Now add another layer of Cheese and add a little bit of White Sauce on top. Top with the few remaining Veggies.
  7. You can also top with Sauces if you would like. I topped mine with a little bit of Spring Onion.
  8. Preheat your Oven/Microwave at 180C. After preheating, 'bake' your Lasagna for about 20 minutes. Baking helps in melting the cheese. I baked mine for 20 minutes and it was perfect.
  9. Refrigerate if to eat later, but best served warm.
